1035. Lemon Trifle


I have been putting my beautiful trifle bowl, a tasteful and generous gift from my dear brother in law, to very good use. The pomegranate Eton dessert, cappuccino trifle, and banana pudding all presented gorgeously. Other than that, tiramisus, and chocolate mousses would also be great show offs in it. So this lemon trifle got me excited at the opportunity to use this bowl again.
The dessert itself is very simple and very tasty. Tiramisu lady fingers are slightly softened using apple juice. it is then layered between some whipped cream and lemon used. The lemon curd can be bought to make it even easier, or home made.


Ingredients:

20 Italian ladyfinger biscuits
1 cup apple juice
4 cups heavy cream
4 Tbsp powdered sugar
2 cups lemon curd


Method:

Place ladyfinger biscuits on a rimmed baking sheet and drizzle with apple juice; let stand 5 minutes. In a large bowl, whisk heavy cream with sifted powdered sugar until soft peaks form.
Reserve about three tablespoons curd for decoration. Place a third soaked ladyfingers in a trifle bowl. Top with a third lemon curd, then a third whipped cream. Repeat layers, ending with the cream, and decorate with the reserved curd.
Refrigerate at least 3 hours or up to overnight before serving.
