1007. Pumpkin Chocolate Chip Cookies


The ingredient list is actually short were it not for the spices. Sugars, butter, flour and an egg with a healthy dose of pure pumpkin puree are mixed with the perfect Autumnal spices and flavorings. After a brief refrigeration stint, the cookies are baked into a soft chewy bites.
Now if you had a ready grocery access to North American products, you will find the spices pre-mixed under the label of pumpkin spice, and pure pumpkin puree available in cans.


Ingredients: makes 24 cookies

1/2 cup brown sugar
1/2 cup sugar
1/2 cup butter, melted
1/2 cup pure pumpkin puree
1 egg
2 tsp vanilla
1 3/4 cup flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/4 tsp nutmeg powder
1/4 tsp ginger powder
pinch clove powder
1 cup chocolate chips


Method:

Whisk the flour, baking soda, salt, cinnamon, nutmeg, ginger, cloves, and chocolate chips until evenly distributed; set aside.
Beat the sugars and melted butter until combined. Whisk in the pumpkin puree, egg, and vanilla. Beat the flour mixture in until just combined. Refrigerate batter for an hour.
Pre-heat oven to 375F. Scoop the batter onto a baking sheet, spaced about an inch apart. Bake for about 12 minutes. Cool completely on the baking sheet before removing.
