895. Buffalo Chicken Meatballs


This is a fast weekday meal with a punch of flavor. Served alongside a carb of choice (potatoes or bread or rice) and a healthy side of sauteed or steamed or roasted vegetables, it makes for a hassle-free and go-to dish.
Buffalo chicken is basically any form of cooked chicken (wings are most popular) coated in a melted butter and hotsauce mixture. The crumbled blue cheese topping mimics the generic blue cheese dressing buffalo wings are usually served with.


Ingredients:

450g chicken breast
1⁄2small onion, grated
2 garlic cloves, grated
1⁄2 cup parsley, chopped
1 tsp salt & freshly ground black pepper
olive oil, for drizzling
2 Tbsp butter
1⁄2 cup hot sauce
blue cheese, crumbled


Method:

In a food processor, blitz chicken breast until resembles ground meat. Be careful to not over-process into a paste.
Combine ground chicken, onion, garlic and parsley.
Season with salt and pepper.
Form meatballs, drizzle with olive oil, and bake at 400F for 12-15 minutes or saute in a pan until cooked through.
In a pan, melt butter and add hot sauce.
Once meatballs are cooked, add them to the pan to coat with sauce and serve topped with crumbled blue cheese.
