469. Marinated Feta Cheese


Marinated feta cheese is a criminally easy thing to make, yielding unbelievably huge rewards.

The best part is that you can put almost anything around the cheese, top it with olive oil, and you're done!
Amazing flavorings include fresh herbs: fresh dill, fresh coriander, fresh mint, fresh basil...
Vegetables: kalamata olives, sun dried tomatoes, sliced chili, lemon, garlic...
Seeds: coriander seeds, fennel seeds, caraway seeds. mustard seeds...
Just cube the feta cheese, layer in a clean jar, sprinkle each layer with your chosen flavorings, and top to the brim with olive oil. The longer it sits in the fridge, the more enhanced the flavors get.
I would recommend keeping it refrigerated at all times, and consuming it within two or three weeks.


Ingredients:

feta cheese
fresh chopped dill
coriander seeds
sliced red chili
kalamata olives


Method:

Cut the cheese into bite-sized cubes.
Arrange a layer of cheese into a clean jar.
Sprinkle with some dill, coriander seeds, sliced chili, and olives.
Repeat layers until jar is filled.
Top to cover completely cover with olive oil.
Serve with some crispy toasted bread slices.
Store refrigerated and consume within two weeks.
